But if you’re partial to a contemporary take on the beloved cheesecake, then you too will be smitten with this Yuzu Cheesecake, which pairs three cubes of luscious cheesecake with refreshing elements of blood orange sorbet, fresh pomelo, delicate shards of salted plum meringue, and shortbread crumbs for a deconstructed version that wouldn’t be out of place in any top Sydney fine diner.
